Traditional Bilona Method

Pure & Traditionally Made

Manufactured in our Falna Plant

Rooted in Ayurveda

Sewari Pure Desi Ghee is prepared using the traditional Bilona process, beginning with whole milk that is cultured into curd, churned to separate fresh makkhan, and then slowly clarified into rich, aromatic ghee.

Made for the everyday Indian kitchen, it brings the familiar golden colour, aroma and richness of traditionally prepared ghee to dal, rice, rotis, parathas, sweets and festive preparations.

The Traditional Bilona Process

Bilona ghee is defined as much by its process as by its final form.

Farm-Fresh Milk
Whole milk sourced from trusted local dairy farms forms the starting point of the process.

Traditionally Cultured
The milk is fermented into thick curd over approximately 8–12 hours, allowing the traditional cultured process to develop before churning.

Bilona Churned
The curd is churned using the Bilona method to separate fresh makkhan (butter).

Slowly Clarified
The freshly separated makkhan is gently heated, allowing the milk solids to separate naturally while the ghee develops its characteristic golden colour, aroma and flavour.

Filtered & Packed
The clarified ghee is filtered and packed for everyday kitchen use.

It is this journey — milk → curd → makkhan → ghee — that distinguishes the traditional Bilona method.

What Makes Bilona Different?

Rather than preparing ghee directly from cream, the traditional Bilona method first cultures milk into curd.

The curd is then churned to obtain makkhan, which is slowly heated and clarified into ghee.

This additional fermentation and churning stage gives Bilona ghee its traditional identity and contributes to its characteristic aroma, texture and flavour.

The Ayurvedic Perspective

Ghee is known as Ghrita in Ayurveda and holds an important place within the classical concept of Sneha — the quality of unctuousness, nourishment and richness.

Traditional Ayurvedic texts associate Ghrita with concepts including:

  • Medha — supports cognitive faculty
  • Smriti — supports memory
  • Bala — supports strength
  • Ojas — supports vitality
  • Chakshushya — traditionally associated with the eyes
  • Agni Pradipak — traditionally discussed in relation to digestion and hunger
  • Agni Pradipak —  traditionally associated with blood purification
  • Sneha — nourishing and unctuous quality

Ghrita is also traditionally discussed as particularly compatible with Vata and Pitta contexts because of its characteristic qualities.

These traditional descriptions illustrate why ghee has occupied such a distinctive place in Indian food and Ayurvedic culture for generations.

These references describe classical Ayurvedic understanding and are not intended as medical or therapeutic claims about this product.

Taste & Cooking Character

Sewari Bilona Ghee has a rich, rounded aroma and familiar buttery character.

Its fuller flavour makes it suitable both as a cooking medium and as a finishing ingredient, where even a small spoonful can become part of the taste and aroma of the finished dish.

Natural variations in colour, texture and granulation may occur with changes in temperature and between batches.
